Ingredients
200 gms of Okra
30 shallots whole peeled
1 spoon of mustard seeds
Half a spoon of fenugreek seeds
A quarter spoon of turmeric powder
One and a half spoons of Chili powder
3 green chillies
25 gms of garlic
200 ml of water in which 25 gms of Tamarind has been soaked and squeezed
10 ml of oil
1 Tomato cut into pieces
Salt to taste
1 Sprig of curry leaves
Preparation
Heat the pan and pour in 10 ml of oil. Put in the mustard seeds and the fenugreek seeds and let them pop. Then put in the garlic and the shallots and saute well till the shallots lose their pinkish color.Add the okra pieces and saute till the okra pieces lose their sticky mucin. Add the green chillies and saute. Add the tomato piece and saute for 5 minutes. Add the chili powder and the turmeric powder and saute and mix. Add salt to taste and mix well. Pour in 200 ml of water in which the tamarind has been soaked and squeezed. Mix all the ingredients well in the water. Let the mixture cook for 20 minutes. After 20 minutes put in the curry leaves and mix and take off the flame and serve
